German: Beer Cheese Spread (Obatzda)

(serves 6)
Ingredients:
- 4 oz cream cheese
- 4 oz Camembert (or sub brie)
- 1 tablespoon butter, room temperature
- ⅓ cup white onion, very finely chopped
- 2 tablespoons finely chopped chives, plus more for garnish
- ½ teaspoon caraway seeds, ground
- 1 tablespoon sweet paprika
- salt and pepper to taste
- 4 tbsp wheat beer
Procedure:
- In a mixing bowl: mix together the cheeses and butter with a rubber spatula
- Add onion, chives, caraway seeds, paprika, salt, and pepper; mix until the spread is a consistent color
- Add beer, a splash at a time, until the spread feels like a dip
- Refrigerate for at least 1 hour before serving
- To serve: stir the spread again and garnish with chives; serve with soft pretzels
