German: Beer Cheese Spread (Obatzda)

Ingredients:

Procedure:

  1. In a mixing bowl: mix together the cheeses and butter with a rubber spatula
  2. Add onion, chives, caraway seeds, paprika, salt, and pepper; mix until the spread is a consistent color
  3. Add beer, a splash at a time, until the spread feels like a dip
  4. Refrigerate for at least 1 hour before serving
  5. To serve: stir the spread again and garnish with chives; serve with soft pretzels
